- 4-6 beef or goat trotters
- 2 onions, chopped
- 1 tomato, chopped
- 1 tbsp ginger garlic paste
- 2 tbsp ghee or oil
- 2-3 bay leaves
- 1 cinnamon stick
- 4-5 cloves
- 4-5 green cardamom pods
- 2 black cardamom pods
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- 8-10 cups water
- Chopped cilantro and green chilies for garnishing
Instructions:
- Clean the trotters thoroughly and soak them in water for 2-3 hours.
- In a pressure cooker or a large pot, heat the ghee or oil over medium heat.
- Add the onions and sauté until they turn golden brown.
- Add the ginger garlic paste and sauté for another minute.
- Add the tomatoes and cook until they turn soft and mushy.
- Add the bay leaves, cinnamon stick, cloves, green cardamom pods, and black cardamom pods, and sauté for a minute.
- Add the cumin seeds, coriander seeds, turmeric powder, red chili powder, and salt, and mix well.
- Drain the trotters from the water and add them to the pot, and stir well.
- Add 8-10 cups of water and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for 3-4 hours or until the trotters are tender and the gravy has thickened.
- Remove the trotters from the pot and shred the meat off the bones.
- Return the shredded meat to the pot and mix well.
- Garnish with chopped cilantro and green chilies and serve hot with naan bread or rice.
Note:
If you don't have a pressure cooker, you can cook the trotters in a regular pot for 6-7 hours or until they are tender. You may need to add more water during the cooking process to prevent the gravy from drying out.
