Karahi

A spicy, tomato-based curry made with chicken or mutton, cooked in a wok-like pan called a karahi. Here's a recipe for Karahi:

Ingredients:

  • 500g boneless chicken or mutton, cut into small pieces
  • 3-4 tomatoes, chopped
  • 1 large onion, finely chopped
  • 2-3 green chilies, chopped
  • 2 tablespoons ginger garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • Oil for cooking
  • Fresh coriander leaves for garnishing

Instructions:

  1. Heat oil in a large karahi or wok over medium heat. Add cumin and coriander seeds and fry for a few seconds until fragrant.
  2. Add chopped onions and green chilies and fry until onions become translucent and lightly browned.
  3. Add ginger garlic paste and fry for another minute.
  4. Add chopped tomatoes, red chili powder, turmeric powder, garam masala powder, and salt to taste. Mix well and cook until tomatoes are soft and pulpy.
  5. Add chicken or mutton pieces and mix well with the masala. Cook on medium-high heat for 5-7 minutes or until the meat is browned.
  6. Lower the heat, cover the karahi with a lid and let the meat cook for another 10-15 minutes or until fully cooked and tender. Stir occasionally.
  7. Once the meat is fully cooked, garnish with fresh coriander leaves and serve hot with naan or roti.
