Samosas

 A popular snack made by filling pastry shells with spiced potatoes, peas, or meat and deep-frying them. Here's a recipe for Samosas:

Ingredients:


For the Dough:


  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3 tablespoons vegetable oil
  • 1/2 cup water

For the Filling:


  • 2 medium potatoes, peeled and chopped into small pieces
  • 1/2 cup green peas
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds, crushed
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons chopped fresh coriander leaves
  • Oil for deep-frying

Instructions:


  1. To make the dough, combine the flour and salt in a mixing bowl. Add the oil and mix until it resembles breadcrumbs.
  2. Add water a little at a time, kneading the dough until it comes together into a smooth, firm ball.
  3. Cover the dough with a damp cloth and set aside for at least 30 minutes.
  4. To make the filling, heat oil in a pan over medium heat. Add cumin seeds and coriander seeds, and fry until fragrant.
  5. Add chopped potatoes, green peas, garam masala powder, red chili powder, and salt to taste. Mix well, cover, and cook until the potatoes are tender, stirring occasionally.
  6. Once cooked, add chopped fresh coriander leaves and mix well. Remove from heat and let it cool down.
  7. To assemble the samosas, roll out the dough into a thin, large sheet and cut it into strips.
  8. Take one strip and fold it into a triangular shape. Fill the triangle with 1-2 tablespoons of the filling mixture.
  9. Fold the triangle over to form another triangle, and continue folding until you reach the end of the strip.
  10. Seal the end of the strip with a little water to ensure the samosa doesn't open during frying.
  11. Heat oil in a deep frying pan over medium heat. Add the samosas in batches and fry until golden brown and crispy, turning occasionally.
  12. Once cooked, remove the samosas from the frying pan and place them on paper towels to remove excess oil.
  13. Serve hot with chutney or ketchup.
